What you should be eating right now

I'm not good at making up recipes, but I'll be danged if I'm not good at eating. Therefore, I love to pin and make other people's recipes. And again, I'll be danged if some of those recipes weren't darn delicious! Along that strain, here's another installment* of "You-have-to-make-this-right-now!"

I love bread. I love strawberries. And most of all, I love easy recipes, which is why Janssen's strawberry bread is a must-make. 

Speaking of Janssen, she fortunately linked to this lentil soup recipe. I was hesitant of the soup at first, but oh.my.goodness. Both Spencer and I said that this recipe was way better than we thought it would be. Seriously, so good IF you put in the sauteed spinach and yogurt. Those are necessary!

Another vegetarian recipe that has been a go-to is this unda quesadilla recipe. So quick and so frickin' delicious! I use two eggs, instead of one egg and one egg white, and feta cheese and marina sauce. 

If you noticed, all of these recipes have been labeled as "easy," and this one is no different, but this one is also fancy-pants. When I made it for a friend, she called it "gourmet." Ooo-ee! I'm gourmet! All thanks to a pear and chocolate cake (I just used semi-sweet chocolate chips instead of bittersweet) and almond whipped cream on top.

  1. Isn't that soup SO much better than you'd expect? It instantly made me a lentil convert.

    Also, we had those egg quesadillas twice last week. SO GOOD EVERY TIME. Maybe I will make them tonight for dinner. . . .

  2. I have been wanting a lentil soup! Costco carries a lentil soup that I love, it's different from this one, but Landon likes it too, so I figured I needed to start making some lentil soups!   3. Boooo my last comment didn't work, hopefully it does this time...so I'm excited to try this! I'm a little iffy about cooked spinach, not my fav, but I've been looking for a lentil soup because Landon and I like to eat one from Costco that is yummy (Chris has never tried it). It's just a pre-packaged one so I've been wanting to make one! Here is a yummy asparagus soup recipe (and I didn't use cream).
