Pumpkin recipe: Pumpkin squares

This is my very favorite pumpkin recipe!
It was actually the recipe that taught me to like pumpkin (before this, all I had had was pumpkin pie, which is the bologna of pumpkin recipes). And like all of my other recipes, this is quite easy, which always makes a recipe taste infinitely better.

Pumpkin Squares

Crust:
1 pkg yellow cake mix (save 1 cup for topping)    
1/2 cup butter softened
1 egg

Filling:
2 cups pumpkin
3/4 cup brown sugar
1 tsp salt
2 eggs
3/4 cup evaporated milk
1 tsp vanilla

Topping:
 1 cup cake mix
1 tsp cinnamon
1/4 cup sugar 
1/4 cup butter (not melted!)

Mix crust and press into bottom of 9 x 13 pan. Mix filling and pour over crust. Mix topping and crumble on top. Bake at 350 for 45 minutes. Let cool for a bit and serve with whip cream.

  1. Ah, I have found the recipe that will use up some of the half dozen or so jars of pumpkin in my pantry. We've been mixing up pumpkin everything - oatmeal, bread, cookies, and now - bars. Sounds delicious!

  2. Haha the bologna of pumpkin- I agree I'm not a big pumpkin pie fan. This on the other hand looks amazing- added to my recipe list! :)
